Roasted Veggie Pesto Pasta

I'm a huge pasta fan and I recently tried this recipe and was in love! I prefer making pesto from scratch cause it's seriously so easy and so much better than store bought. My measurements might not be exact so definitely taste it and adjust accordingly! 

Roasted Veggie Pesto Pasta

Prep Time: 25 minutes

Servings: 4 people

Pesto Sauce
  • Bagel (2 whole bagels) 
  • Tomato (4 slices)
  • Onions (chopped) 
  • Spinach
  • Cream Cheese 
  • Salt & Black Pepper
  • Cucumbers
  • Ketchup
  • Sriracha
1. Toast 2 bagels until crisp- we recently started buying Dave Killer's Bagels (linked above) because it had some protein in it, but you can use any bagel
2. Once the bagel is toasted, spread cream cheese on both sides- I like to use the Jalapeño Salsa Shmear from Noah's Bagel or the Garden Veggie from Safeway but you can use any 
3.  To assemble: once your shmear is added, put spinach on one side (around 3/4 pieces), top with cucumbers, tomatoes, onions, salt & pepper, and sriracha (all on one side), put the other half on top and you're done! 
4. Literally so fast to make; eat with ketchup & enjoy!
