Ike's Copycat Sandwich

I'm a huge fan of sandwiches and Ike's is one of my favorite sandwich shops. I've always tried to make their sandwiches (specifically the "Reading Rainbow") at home but could never get it right. So I actually called them and asked where they get their fake chicken from and now I can include it in my recipe! This sandwich is super similar to my avocado pesto sandwich but there's a few variations. If you've been to Ike's, you know their famous for their "Dirty Sauce," I saw some copycat recipes online so tried making my own! 

Ike's Copycat Sandwich

Prep Time: 15 minutes

Servings: 2 people

"Dirty Sauce"
  • 1 Garlic (crushed)
  • 1 tbs Mayo
  • Salt & Pepper
  • 1 tsp Lemon Juice
Ingredients

1. Bake you chick'n tenders at 430 degrees for about 7 minutes (until golden brown). Use 2 chick'n tenders per sandwich

2. While your tenders are in the oven, combine all the ingredients for your "dirty sauce" and mix in a bowl well 
​
3. Before you toast the bread, spread your "dirty sauce" on both sides and put half a slice of cheese on each half
​
4. Toast 4 slices of your bread until crisp & the cheese has melted - we recently started buying Dave Killer's Bread (linked above) because it had some protein in it, but you can use any bread (Dutch Crunch works best to get the taste to be exactly the same)

5. To assemble: Spread pesto on both sides of the sandwich, then spread avocado on both sides (usually 1/2 an avocado per sandwich). Add your tenders on top and then the tomatoes, onions, lettuce, and spicy mustard & enjoy!
