Bagel Sandwich

This is seriously the easiest and fastest recipe to make! When I only have a few minutes to make lunch, this is my go-to sandwich because it gives me major brunch vibes! Is it breakfast, is it lunch? No- it's brunch because it's a bagel sandwich! 

Bagel Sandwich

Prep Time: 10 minutes

Servings: 2 people

Ingredients 
  • Bagel (2 whole bagels) 
  • Tomato (4 slices)
  • Onions (chopped) 
  • Spinach
  • Cream Cheese 
  • Salt & Black Pepper
  • Cucumbers
  • Ketchup
  • Sriracha

Instructions
1. Toast 2 bagels until crisp- we recently started buying Dave Killer's Bagels (linked above) because it had some protein in it, but you can use any bagel
​
2. Once the bagel is toasted, spread cream cheese on both sides- I like to use the Jalapeño Salsa Shmear from Noah's Bagel or the Garden Veggie from Safeway but you can use any 
​
3.  To assemble: once your shmear is added, put spinach on one side (around 3/4 pieces), top with cucumbers, tomatoes, onions, salt & pepper, and sriracha (all on one side), put the other half on top and you're done! 
​
4. Literally so fast to make; eat with ketchup & enjoy!
