Avocado Pesto Sandwich
My sister actually found this recipe on TikTok and so I decided to try it but add some protein in it! As a vegetarian, I always struggle with adding protein to my diet so I liked this recipe cause it's healthy, easy to make, has a good amount of protein, and delicious! ​
Avocado Pesto Sandwich

Ingredients

1 Avocado
-
Bread (4 slices)
-
Tomato (4 slices)
-
Onions (chopped)
-
Crushed Red Peppers
-
Everything but the bagel seasoning
-
Black Pepper
-
Lettuce
-
Pesto
-
Tofurkey (4 slices)​

Balsamic Glaze
-
Ketchup (optional)

Instructions
1. Toast 4 slices of your bread until crisp- we recently started buying Dave Killer's Bread (linked above) because it had some protein in it, but you can use any bread
​
2. Once the bread is toasted, on one side spread pesto and on the other spread your avocado
​
3. On the avocado side, add your everything but the bagel seasoning, crushed red pepper, and black pepper on top
​
4. On your pesto side drizzle some balsamic glaze
​
5. To assemble: add your tomatoes, lettuce, onion and 2 slices of tofurkey on top
​
6. I like to eat this with ketchup but that's just me!
